| Cheese and nuts, the classic accompaniment to Port, can serve both as an appetizer or a dessert. Stilton, Gorgonzola and the Portuguese cheeses St Jorge and Serpa are wonderful with the whole family of full-bodied fruity Ports. Creamy cheeses such as Brie, Camembert and Brillat-Savarin from France, Edam from Holland, Bel Paese and Moscarpone from Italy, as well as the Portuguese cheeses Serra, Azeitao, and Castelo Branco are all fabulous with Tawnies. The whole range of nuts also helps bring out the best in port. White Port becomes and exilir with almonds sauteed in olive oil. Chestnuts, Cashews, and Hazelnuts with their sweet, rich texture go well with fruity Port. Dense types such as walnuts and Brazil nuts fit Aged Tawnies like a glove.
