ENRICO PROSECCO BRUT is a delicious Italian Sparkling Wine produced from the Prosecco grape. The color is a brilliant straw yellow enlivened by its strands of tiny bubbles. It's aromatic quality is fresh and rich in fruity aromas of apple and pear with a hint of citrus fruit which fades into the floral bouquet. The mouth is soft, yet dry thanks to its good acidity. The winery, Bellussi Spumanti SRL, is located a little over 30 miles from Venice in the Conegliano-Valdobbiadene area.

The Bellini was invented in 1948 at Harry's Bar in Venice, Italy. Giuseppe Cipriani was the head bartender at the time and had a strong fondness for Italian white peaches. He worked long and hard trying to develop the perfect cocktail using the peaches as a base. He then tried the simple combination of pureed white peaches and Prosecco Italian sparkling wine... and as soon as he tasted it he knew he had something special.

Ingredients
5 oz ENRICO PROSECCO BRUT SPARKLING WINE (chilled)
1 oz white peach puree

Pour peach puree into a champagne flute, then add ENRICO PROSECCO BRUT SPARKLING WINE. The peach puree can either be made from ripe peaches that have been peeled, or you can use a commercial version such as "California White Peach Puree" made by The Perfect Puree Company of Napa Valley.
