| Poached Pears In Sherry Wine
Peel pears completely leaving stem intact. With melon baller remove core. (About 3 scoops). In medium size pot place HARTLEY & GIBSON'S PEDRO XIMENEZ Cream Sherry, water, sugar, orange peel, cinnamon and pears. Place on stove over medium-high heat and bring to a simmer. Let simmer for 20-25 minutes. Remove from stove and let cool overnight.
1/2 pint heavy cream
Whip cream slowly adding sugar until there are medium peaks. Serves 4: Place each poached pear on a bed of the sweetened whipped cream and serve with a glass of HARTLEY & GIBSON'S PEDRO XIMENEZ SHERRY. The PEDRO XIMENEZ may be poured over the pear as well as sipped from the glass as a delicious accompaniment. |
